I'd probably go for Shawshank Redemption too, although all the plot is really in the ending.
If it's just plot we're talking about, then it's also worth mentioning 'Brass Target' and 'Posiedon Adventure'. And a couple of quirky ones: 'Vamp' and 'Sex Lies and Videotape'.
But,really, the list could almost be as long as the Greatest Film.

The best film plot is without a doubt Female Trouble. The owners of a beauty salon equate beauty with crime and encourage the actor Divine to commit more and more violent acts to become more beautiful.

I have to agree about Vanilla Sky but i recently watched Derailed and i really liked the plot for that i didn't expect it to end how it does.
