Saving Private Ryan has the best opening to any war film but falls down after this. Shindlers List is a far better Spielberg film, just for its emotional impact.
All Quiet on The Western Front is excellent for showing the futility of war.
Full Metal Jacket for war as comedy entertainment.
Dambusters or 633 Squadron for British stiff upper lips.
Black Hawk Down demonstrates how a complete disaster can almost be shown as a victory.
Das Boot for showing the other side, especially the original language version.
Kelly's Heroes is the best example of a complete balls up of a war film.

Saving private ryan.
Apocalypse Now.
Platoon.
Casualties of War.
And, just to be awkward, Star Wars! Granted, its not set in the trenches of a bloody battlefield, but it is a war film. Obviously Darth Vader and co are the far, far away equivalent of the germans.

I think Kubrick's 'Paths of Glory' shot in b/w
set in the trenches of the 1st world war. This had a career-defining best performance by Kirk Douglas. He was fighting for the men who had been court-martialled and were going to be shot for desertion, Incidentally Kubrick's future wife is the singer.
