I love Gillain McKieths recipes... but as a simple gal from africa.. lots of the ingredients are foreign to me! I have tried to look around for Quinoa - what is it? Know its a grain.. but is it similar to something else I could use?? Aslo Rice milk. Do you make that, or buy it? What is the difference between red and pink lentils? and is there something similar to Carob powder? what is that made from? Would appreciate any feedback
Quinoa can be cooked much like rice, bringing 2 cups of water and to 1 cup of grain to the boil, covering and gently simmering for around 15mins. The grains will develop a 'tail' wen cooked. You can use stock inplace of water for flavour and add vegetables and seasoning. Use as an alternative to rice or cous cous. You can also cook it for breakfast as porridge adding rice milk, cinnamom and berries.
You can make rice milk at home but it is commercially available. It isn't like cows or soya milk in that it doesn't contain much protein or calcium (unless the later has been added).
Don't think there is much or any difference between pink and red lentils.
Carob powder comes from the ground seeds and pods of the carob tree and is used as a chocolate substitute, but doesn't tasste much like it. Not sure about a substitute for carob powder though if that's what you were asking for.
