Hi guys Just a quick hello to show my face so to speak as not been on since 6 May! Been quite poorly - long story  but on the mend finally Sitting in bed at my parents on my dads laptop - which i managed to surgically remove from him for half an hour  to say hello Did y'all miss me? Bet you didnt  Oooh its sooo nice to be on the comp again, ive missed it so much  Take care everyone and chat soon (Mrs_O - havn't posted on invision yet as need to find where ive written down web address. Saved on my laptop of course but cant use that here - will post as soon as i have addy) xxx

Tea tonight - pork steak strips with cream and mustard sauce, and some of the oregano I've been patiently waiting to grow in the garden, never tried it before, so this is an experiment... carrots, broccoli and cos there were no new spuds in the shop (being Sunday  ) cheated and bought the ones you just heat up in the micro.

Thanks Minkey - its great to be back! Having dinner soon - been eating somewhat differently since been at parents as they are not very experimental in the kitchen like i am. Well dad is, but usually only on special occasions  So ive been living on freezer and tinned food  not that im complaining - i'm very grateful they've put me up through this but cant wait to get back to cooking for myself with 'proper' fresh food Anyway, im rambling - tonight ive chosen to have chicken lattice with potato slices and beans - bet ive put on a few pounds!

Ah bums - sorry I missed you, Minkey... Been mad here with work and one thing and another... Tea tonight was a botched affair - kiddo had left-over meatballs and spaghetti (meatballs from the butcher - they are LUBBERLY!!!), I had oven chips, bacon and 3 eggs (yolk only  ) and Mr O was lumbered with a micro pizza and chips, poor bloke. Tomorrow would have been my late Mums 61st birthday, so I am going to cook something nice for her - she was a wonderful cook.. feeling blue tonight.. I miss her so much.

Okkkayyy! Seems to be working at last.  The annoying thing is trying to reword my thoughts.... Just to say, no worries mrs o, I know you have such a hectic, busy household, and only worry when it is a day or 2 before you are within speaking distance!! So very sorry to hear of your mum's anniversary, what a young age to leave all that loved her... my heart goes out to you. I am still blessed with both parents, but readily admit, am dreading the day... can I just say I'm sure she would be very proud of you, and especially as the talent she had for cooking, has obviously been passed down to you, me ole matey! Big hugs, Minkey, thank you... - time does heal very slowly, but I know that Mum and I would have had a blast yesterday... I'd have cooked her something really special, or taken her out for a pig-out at one of her favourite restaurants! I bet I know what she'd have had - we'd have gone to the Bay Horse (AMAZING food - it's famous up here) and she'd have had Lamb Henry, which is a Lancs speciality, lamb shank braised in mint for hours, and mint gravy - it's gorgeous.
Tonight - El Kiddo demanded home-made lasagne, which I've never made before, believe it or not, so luckily I had a load of best mince in the freezer and a jar of Dolmio white sauce - I was stuffed (polite term - the real one begins with F) if I was going to make it from scratch. It turned out fine, so we had that with mixed salad with radishes, baby sweetcorn, cherry tomatoes, and a few other bits.
I'm getting really good at this salad dressing lark - made a corker with olive oil, red wine vinegar, soy sauce, honey and fresh basil.
Fell asleep on Mr O this evening for 3 hours, it's his fault for being so comfy - only woken up by my friend Jade calling at midnight, so now I'm not bloody tired at all.
ARGGGHHH!! I hate it when that happens...

Just sweated my t*ts off making a massive frittata, with tuna, spuds, onion, herbs topped with cheese.
It's so flimmin muggy here - not right for us, cos we're right on the sea, but there's not a whiff of breeze.
I think another massive coleslaw is due tomorrow... my darling husband is going to turn into a cabbage soon - well, more than he already has. *legs it*

Never made a frittata before!
Do you slice the potatoes or chunks? I assume then you shallow fry the potatoes and onions then add the tuna and eggs?

How I do it is an idea I got off the telly years ago. Par-boil some new spuds - enough to cover the bottom of yer frying pan, let them cool enough to handle, then slice and remove as much of the skin as you can. Beat as many eggs as you need - 2 per person + 2(I'm lucky and get me eggs off my best mate who's got her own chickens) with lots of salt and pepper, and herbs of yer choice - mixed dried herbs, or oregano is nice with this. Heat the frying pan with some oil and plenty of butter, and fry the potato slices until just starting to brown. Then chuck in a chopped onion and a drained flaked can of tuna in brine/spring water (don't use the tuna in oil - it'll wreck it. Let it heat through, then throw in the beaten eggs. Pull the sides in as it starts to bubble, pushing the filling into the eggs, so that the raw egg can cook - tilt the pan a lot. Once only the top is still runny, chuck over a load of grated cheese, and then finish it off under the grill til the cheese is brown. This is the most filling thing I've ever made, and it's totally gorgeous. The trick is to get everything ready before you start. How the devil do you make beef cobbler??? Never even seen a recipe for it! (How the devil are you all by the way - been that busy, I've hardly had time to get on here...)

Minced beef cobbler - just an old fashioned name for mince and dumplings! Really simple but tasty. Nan just use steak mince with chopped onion, carrots, peas, some herbs and a few beef stock cubes with water to give it a rich flavour Then she just puts in an ovenproof dish, makes the dumplings from scratch and pops them on top of the mince and bakes in oven for 20-25 mins I remember having this as a child for school dinners and the mince always being really runny and tasteless
