Thought I'd share with you all my recipe for Turkey & Gammon Pie

Boxing day - lots of leftover meat, some veg and a frozen block of puff pastry, i was feeling adventurous Big Grin & decided to experiment (i love cooking & trying new things but had never attempted anything involving pastry before Eek )

Anyway i gave this a go and it was absolutely delish! And so quick and simple!

To feed 4 or 5 - approx amounts (sorry cant/wont do weights!)

Bowl of cooked, chopped Turkey (or chicken)
Bowl of cooked, chopped Gammon (or bacon)
2 Leeks, sliced
Carton of Mushrooms, chopped
A few spring onions, chopped
2 cloves of garlic, crushed or finely chopped
1 tbsp oil
2 tbsps butter
Handful fresh Parsley, finely chopped
Jar of white lasagne sauce
1 Chicken stock cube
Block of puff pastry
Salt & Pepper
1 egg (whisked) or milk - to brush on pastry

In a large frying pan or wok, add oil and melt butter. Add leeks, onions, garlic and mushrooms and cook on a low heat stirring frequently for around 5 minutes

Add the turkey and gammon and continue to cook for a further 5-10 minutes. Stir in the parsley

Mix stock cube with 200mls hot water - add this to the pan, along with the white sauce. Stir well to combine. Add salt and lots of pepper

Let simmer for a few minutes, then pour into a large oven-proof dish (suitable for the pastry to cover on top of the filling)

Roll out pastry on a floured surface, around 1cm thick and enough to cover the dish. Place over the mixture, tucking in edges and make a cross slit in the centre to let out steam

Brush pastry with whisked egg or milk and bake in oven at 190c for around 35 mins or until pastry is browned and risen

oooh one thing i forgot to add!

Make sure pastry (if frozen) is thawed before rolling - obvious i know but just incase! Big Grin

Sounds great, Angel - worth going out and buying the fresh stuff if you haven't got the leftovers.

Will deffo give it a try.

Yes definitely mrs_o, have been out and bought the stuff fresh to make again since as was so delish!

This time i made up quite a lot - 3 to 4 pies worth of the filling (except the fresh parsley) to freeze for next time and is so simple with the blocks of puff pastry you can buy now - I'm all for the simple life Big Grin

Do give it a try - i think the filling itself would also be good with potatoes or rice

I made this pie night before last with some gorgeous garlic mash, and we had the rest at yesterday lunchtime. Really good. Thanks, Angel, I can see this becoming a regular in my house Smile
