I loved the carbonara with courgettes in tonight's edition, and I would live to make it myself, but I can't tolerate the parmesan. If I try to make the same recipe without the parmesan, should I simply leave it out? Or do I need to replace the bulk with some flour or something?

You could easily leave it out, the main coating for the pasta is the egg, the parmesan is just for flavour.

Yea i agree but a lot of people say they dont like parmesan cos they associate it with the horrid dried stuff. I dont know wether its the case with you but the fresh is much different if not im sure it would be just fine as long as you season it well.

Yes my experience as a kid with parmesan was that awful stuff in a little tub that really smelt bad and tasted worse.

Fresh parmesan is a lot more subtle but excellent for flavouring things without having to use too much.

Same here. Fresh parmesan is delicious, completely different from the horrible cheesy-sock dust we had in my childhood.

Hello everyone, I have just cooked this recipe for my kids(x4)and myself...I have to say it was really easy, and we all enjoyed it. I used 50g of fresh grated parmeasan and it was fine..the only thing was I used just a little to much cream..It is so much nicer than the stuff out of the jar, which has been a main item in my cupboard for the last couple of years..it was not untill I looked at the back of the label, to my absolute horror, was the list of HIDEOUS INGREDIANTS in this jar.."E" numbers GALORE...I will NOT be buying ANYTHING LIKE THAT EVER AGAIN...THANK YOU JAMIE FOR A GREAT EASY RECIPE....Not only is it lovely to see my kds clear their plates, but also to have great ideas for supper time....YOU ARE WONDERFUL..THANK YOU VERY VERY MUCH...

Look on 4od you can watch the whole programme again on your pc for free and write it down, its quite important to get the quantities right or it will be really sickly. I know he used 200g of pasta 2 small courgettes per person 1 egg yolk per person, 25g of cream per person.
