Can anyone help? I'm looking for a butcher who hangs his Beef for at least 28 days. That when you ask for Pigs trotters and head for Brawn or heart or liver and doesn't tell you you have to order it a week in advance and that's if your lucky. Where you can get chickens whole not pre-prepped, yes that's the head and feet and guts. I want a proper old school butcher in Sussex if possible.
