I don't think there is anything to worry about, i'm sure the ticket/boarding cards are checked before getting on to the plane so it is highly unlikely she will end up on the wrong plane.

Have you tried Vueling, the new Spanish low-fares airline? I think they fly to the major cities in Spain, so she could fly Valencia to, say, Seville. They have a website, probably vueling.com Seville to Jerez/ Cadiz/ San Fernando etc are direct on the train from Santa Justa station.
